School Lunches of the Month

School lunches are often mistaken to be depressing, with horror sotries of moldy bread and white chicken making its way through the student body. I know many students who go home for lunch or the hannaford hotbar, wasting time and money (in my personal opinion) when the free school lunch is right there! One of the easiest ways to spice up your school lunch starts with the often neglected salad bar. Some specilites at the salad bar include the fiesta bowl-- which includes rice, beans, peppers, and corn. Adding in feta cheese, onions, kale or spinach can elevate this grain bowl to the next level. Other salad bar specials include caesar salads or a pesto pasta spinach dish. These specials can make the salad bar exciting and the cafeteria staff is much appreciated for taking extra time out of their day to make these dishes. Shout out to Janice for the pesto pasta with spinach dish! The pesto being made with basil straight from our school garden. 

 

But what about when you don’t like these specials? Well you pick up a piece of lettuce and go back to the basics. A standard salad would include lettuce, croutons, and a dressing of your choice. Adding in grated carrots, tomatoes, cucumbers, onions, or peppers can add some extra flavor as well. Some other toppings include feta cheese, corn, beans, chickpeas, pickled onions, peas and edamames. My personal favorite topping combo is feta, red onions, corn, grated carrots and peppers. However, it is really up to the person and their preferences. There is a variety of choices to choose from, making the salad bar the first place students can go when looking for a tasty and interesting school lunch.
